I'm not sure WHY I've never thought of making a pineapple upside-down cake with FRESH pineapple before. Maybe it is because ALL of my cookbooks suggest canned pineapple? Maybe it is because canned pineapple is always in the pantry? Maybe it is because I'm not very adventurous? Well, this cake came about due to the rare combination of... "I want to bake something" + "what can I do with this very ripe pineapple?" + "the perfect window of time". 

The end result was this pineapple upside-down cake made with FRESH pineapple and it was delicious!! The difference is like night and day!!

 

Preheat your oven to 350 and cut a parchment paper liner for the bottom of a 9" round cake pan. Spray the pan and parchment paper with a light coating of cooking spray. The parchment paper is not absolutely necessary, but it helps if you have a "sticking" issue with the sweet pineapple glaze (you can use waxed paper in a pinch).

5 tablespoons of melted butter
2/3 cup brown sugar (packed)
3 cups fresh pineapple cut into 1" cubes (see note)
maraschino cherries cut in half
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup butter (room temperature)
2/3 cup white sugar
2 eggs
3/4 cup pineapple juice (or milk)
1 teaspoon vanilla
1 teaspoon butter extract
1/2 cup pecans chopped medium-small

Mix melted butter with brown sugar and spread evenly in prepared 9" round cake pan. Set aside.

Cut pineapple into 1" chunks and blot them dry between several thicknesses of paper towel (press on them a little to extract excess juice).

For the batter, cream the butter and sugar until it is really fluffy. Under-beating the butter at this stage will give you a poor quality cake. When it is nice and fluffy, add the eggs (one at a time) and extracts and beat until its fluffy again.

Sift the flour, baking powder and cinnamon into a bowl. Add the flour mixture to the butter mixture in three parts, alternately with the pineapple juice (or milk) starting and ending with the flour. Set aside.

Assembly: Nestle the pineapple, pecans and cherry pieces down into the brown sugar mixture in the cake pan (arrange in pretty fashion because this will show). Pour the cake batter over the top and very gently spread it out.

Bake in 350 oven for 45 to 55 minutes or until a toothpick tests clean (my oven takes exactly 45 minutes). Remove from oven and sit pan on a cooling rack for 15 minutes. After 15 minutes, run a thin bladed knife around the edge of the cake and invert onto a serving plate and peel off the parchment paper. Serve cake warm or at room temperature.

NOTE: Traditionally, pineapple upside-down cake has pretty rings of pineapple with red cherries in the center of each ring. However, when the cake is baked like that, it is hard to eat. You either get a big unmanageable hunk of pineapple on your piece of cake or no pineapple at all (does that make sense?). Instead, I cut the pineapple into very small pieces (almost a dice) and arrange the cherries randomly over the cake. It is much easier to cut, serve and eat (even if it ISN'T traditional). If you use this diced pineapple style, it only takes two cups of diced fruit instead of three.

This old fashioned, super moist, snack cake is quick, easy and only takes ONE apple!! It is the PERFECT snacking cake and goes wonderfully in a lunch box.

 
 
1/3 cup brown sugar lightly packed
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter (room temperature)
2 eggs
1  1/2 teaspoons vanilla extract
1  1/2 cups flour
1  3/4 teaspoons baking powder
1/2 cup milk
1 large apple
 
Preheat oven to 350°F and grease and flour a 9"x5" loaf pan.
 
Core and peel the apple then pulse it in the food processor a few times until the pieces are about the size of a green pea.
 
Mix brown sugar and cinnamon together and set aside. 
 
Beat white sugar and butter together until smooth and creamy; beat in eggs, one at a time; add vanilla, flour and baking powder and beat until smooth, then stir in the milk and chopped apples, until the batter is well mixed.
 
Place 1/3 of the batter in the loaf pan and top with 1/3 of the sugar-cinnamon mixture; do that two more times, ending with sugar cinnamon.
 
Bake at 350°F for 30-40 minutes (my electric oven takes 40 minutes) or until toothpick tests clean.
 
Let cake cool in pan for about 10 minutes, then turn it out on a rack to cool.
 
This snacking cake definitely does NOT need any frosting, ENJOY!!

This recipe has been in my recipe box for so long, that it seriously needs to be replaced. It is covered with thumbprints and little vanilla splash stains that have accumulated over the last 30 years. Every time I see the card, it reminds me of the times I made this for my children and I can't bring myself to make a new card. It is a deliciously MOIST and easy cake.

2 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 cups granulated sugar
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 teaspoons vanilla extract
1 cup vegetable oil
4 eggs
2 cups grated carrots
1 cup crushed pineapple (most of a 20 oz. can)
1 cup chopped pecans
.
Mix the dry ingredients and set aside. With an electric mixer, beat eggs and oil until very well combined. Add the dry ingredients and beat until smooth. Stir in the nuts, grated carrots & pineapple (squeeze it dry then measure it...it will take most of a 20 ounce can). Stir until smooth.
.
Pour batter into a greased and floured pan. Bake in a pre-heated 350 degree oven. If you are using a 9" x 13" pan, bake it for 1 hour. If you are using a large tube pan, like an angel food pan, bake it for 1 hour and 10 minutes. There is just a little too much batter for MY bundt pan, but if you have a BIG bundt pan, bake it for 1 hour and 10 minutes. Test for doneness with toothpick.

Let baked cake rest for about 10 minutes, then turn it out of the pan.

Joan, my dear friend of 40+ years, sent me this recipe. It is one of the easiest (and richest) cakes I've ever tried and it is covered with a delicious cooked fudge frosting. It is a decadent delight!!


4 Milky Way candy bars (see note)1 cup butter
1 cup chopped pecans
2 cups sugar
1¼ cups buttermilk
1 teaspoon baking soda
4 eggs
2½ cups flour
2 teaspoons vanilla extract

Melt the candy bars, butter and nuts over low heat, set aside to cool. Mix sugar, buttermilk, baking soda, eggs, flour and vanilla, beat with electric mixer for 2 minutes. Fold in candy mixture. Pour into a greased and floured tube pan. Bake at 350 for one hour.
.FUDGE FROSTING2½ cups granulated sugar
1 cup evaporated milk
½ cup butter
6 ounces semi-sweet chocolate chips
½ of a 7 ounce jar marshmallow cream
.
Cook sugar, milk and butter to soft ball stage. Remove from heat. Beat in chocolate chips and marshmallow cream until smooth. Pour QUICKLY over completely cooled cake because this will start to set up as soon as it begins to cool.
.
NOTE: The original recipe called for 4 five cent Milky Way candy bars, so you know how old this recipe is. I used four 2.05 ounce bars but they were more like 69 cents, ha!!
.
NOTE: I baked this in an angel food cake pan and it took exactly an hour.
.
NOTE: Work quickly when frosting this cake because the fudge frosting hardens fairly quickly. The recipe says to pour over the cake and let it drizzle down the edges, but I had enough time to cover the sides. It makes a LOT of frosting and Joan told me she just uses the excess frosting to fill up the hole in the middle of the cake.

This is a fantastic frosting recipe, for many reasons. First of all, it is delicious. After that, it is super easy, super quick, it takes no special ingredients, it is pretty to look at and it is very versatile. It is a classic.

 In a large  GLASS OR METAL bowl, put two egg whites, a teaspoon of vanilla extract and ¼ teaspoon of almond extract...set aside.

In a saucepan, mix 1 cup of granulated sugar, ¼ teaspoon cream of tartar, dash of salt and 1/3 cup of water. Cook and stir until it just comes to a boil and sugar dissolves.
.
Start beating your egg whites and extracts on HIGH while you slowly drizzle in the hot syrup. Keep beating on high until stiff peaks form like this:


With a hand held electric mixer, this can take up to 7 minutes, but with my stand mixer it only takes about 4 minutes. Recipe makes enough to frost a 9" two layer cake or a 10" tube cake.
NOTE: To get these lovely big swirls, use a Wilton tip # 1M...it is a huge tip and will duplicate these swirls with total ease...I promise.
Very light, this frosting is a dream to work with.

NOTE: The bowl AND beaters that you use, for this frosting, can have NO TRACE of grease or oil on them (or the frosting will not whip properly...right out of the dishwasher is perfect). A big stand mixer, like a Kitchen Aid, works the best, but this can be done quite successfully with a hand held electric mixer too (it just takes longer).

NOTE: While this frosting holds up well in all kinds of weather, it WILL form sort of a skin over the soft fluffy frosting if left in dry air for several hours. To prevent this, just cover it if you are not going to eat it the same day.

These peanut butter blondies are dense, moist and packed full of peanut butter flavor; they are the consistency of a good brownie and would make an excellent addition to any lunch box, bake sale or weekend treat served with a big glass of cold milk.

½ cup peanut butter
1/3 cup butter (room temperature)
2/3 cup white sugar
½ cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
1 cup all purpose flour
1 teaspoon baking powder
¼ teaspoon salt
.
In a medium mixing bowl, cream the peanut butter and butter together; beat in the sugars, eggs and vanilla just until well mixed. Add the flour, baking powder and salt and mix just until everything is well mixed.
,
Bake in a greased 9" x 9" baking pan at 350F for 30 to 35 minutes or until top springs back when lightly touched (my oven took 34 minutes). Frost and sprinkle with chopped peanuts. Cool before cutting.

PEANUT BUTTER FROSTING
½ cup peanut butter
1 teaspoon vanilla extract
2 cups powdered sugar
4 to 5 tablespoons milk
Warm the peanut butter in the microwave just until it gets very soft, then whip everything together, starting with the lesser amount of milk and adding more if necessary.

So what does a baker do to celebrate her 60th birthday? She bakes something
SHE really likes!!!
 
 
 
 I found this little recipe gem on My Tasty Treasures last winter; she calls them Fudge Brownie Cups; I call them addictive!!! Donna frosts hers with melted Hershey's chocolate, but since I made these for my birthday, I frosted them with my all-time favorite chocolate cream cheese frosting. These little beauties are moist and chocolate-y and so easy to pop in your mouth. My son calls them "wicked good". Fortunately for me...as all bakers know, calories consumed on your birthday do not count!!!
 
 
 
 2 sticks butter, room temperature
12 ounces semisweet chocolate chips
1 + 1/3 cups firmly packed light brown sugar
2 teaspoons vanilla extract
4 eggs
20 tablespoons flour

Lightly butter mini-muffin pans (I used Bakers Joy spray). Melt together, butter, semisweet chocolate and brown sugar in a pan over low heat, stirring constantly until mixture is smooth (*keep it as cool as possible).
.
Remove from heat and beat in vanilla, then eggs, one at a time, stirring until well mixed. Fold in flour and blend well. (*let this batter sit for about 10 minutes before you bake it and it will be easier to work).
.
Spoon one (*rounded) measuring teaspoonful into each spot. Bake in preheated 350F oven for 10 to 12 minutes (*my oven took exactly 11 minutes). Remove and cool completely.

NOTE: grease or spray pans between each batches of brownie cups. This recipe makes 60.
.
CHOCOLATE CREAM CHEESE FROSTING
1/4 cup soft butter
1/2 cup baking cocoa
8 ounce cream cheese (room temperature)
1 teaspoon vanilla extract
4 cups powdered sugar
.
The butter needs to be really warm, but not melted. Stir the cocoa into the butter and mix well; whip in the cream cheese and add vanilla, scraping the sides of the bowl frequently so that you get a nice smooth butter-cocoa-vanilla-cream cheese mixture. Beat in the powdered sugar, one cup at a time, beating until really smooth in between each cup of powdered sugar.

This is a flourless chocolate and vanilla marble "cake" and it was absolutely delicious, although I don't know if I would really classify it as a cake. It tasted very much like a fudgy cheesecake. I will definitely be making this again.


VANILLA BATTER
8 ounce cream cheese (room temperature)
2/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract

CHOCOLATE BATTER
10 ounces bittersweet chocolate finely chopped
10 tablespoons unsalted butter cut into pieces
3 large eggs
1/3 cup granulated sugar
1 tablespoon espresso
1 teaspoon vanilla extract
pinch of table salt
.
Preheat oven to 300F and position rack in the middle of your oven. Lightly grease a 9"x2" round cake pan and line bottom with parchment paper (I used a springform pan).
.
In a medium bowl, beat the cream cheese with electric mixer until smooth, add sugar and beat until well blended and no lumps remain. Add eggs and vanilla and beat just until blended, set aside.
.
In another medium bowl, melt the chocolate and butter over a pan of simmering water (or in the microwave), whisk until smooth and let cool slightly.
.
Using a stand mixer fitted with whisk, beat the eggs, sugar, espresso, vanilla and salt on medium high until pale and thick (3 or 4 minutes). Turn mixer to low and gradually pour in the melted chocolate mixture and continue beating until well blended.
.
Spread half of the chocolate mixture into the prepared 9" pan. Alternately add large scoops of the vanilla batter and the rest of the chocolate batter to the cake pan. Use a knife to gently swirl the two batters together so they are mixed, but not completely blended. Rap the pan against the counter top a few times to settle the batters.
.
Bake 40 to 42 minutes (mine took 48 minutes) or until a pick inserted 2" from outer edge of cake comes out gooey but not liquid. The top of the cake will be puffed and slightly cracked around the edges (it will settle as it cools).

NOTE: Cover and refrigerate until very cold, at least 4 hours or overnight.

NOTE: This cake is extremely rich, much like cheesecake, so cut small slices.

NOTE: I didn't have bittersweet chocolate, so I used semi-sweet.

This orange & poppy seed pound cake is a true, mid-winter, blast of sunshine. It is (yet) another recipe from the holiday issue of Sweet Cakes published by The Best of Fine Cooking magazine.

Dense, sweet and extremely moist, this
pound cake got rave reviews from Hubby & friends.

2 + 2/3 cups all purpose flour
1½ teaspoons baking powder
½ teaspoon table salt
1/3 cup poppy seeds
2½ cups white sugar
4 teaspoons fresh, finely grated orange zest
1½ cups unsalted butter, soft
8 ounce cream cheese, soft
6 large eggs + 2 large egg yolks (room temp)
1 teaspoon vanilla extract
.
Sift the flour, baking powder and salt together (I just whisk it together) and set aside.
.
Put the sugar and orange zest in the food processor and pulse it for 20 seconds, set aside.
.
With a stand mixer (using paddle beater) beat the softened butter and cream cheese together until smooth and creamy, about 2 minutes. Add the sugar and zest mixture and beat until light and fluffy (about a minute). Beat in the whole eggs, one at a time, stopping to scrape down the sides of the bowl after each egg. Beat in the 2 egg yolks and the vanilla.
.
With your mixer on low, beat in the flour mixture, stop to scrape down the sides of the bowl a couple times. Beat until smooth.
.
Spoon the batter into TWO greased and floured 9x5x3 loaf pans (or 8 mini loaf pans). Bake on center rack of a pre-heated 350F oven for 50 minutes (my oven took 55 minutes) or 25 to 30 minutes for mini-loafs.
.
Cool in pan (on a rack) for 20 minutes, then turn out. Glaze while still warm.
.
ORANGE GLAZE FOR POUND CAKE
2/3 cup freshly squeezed orange juice
1/3 cup white sugar
1 tablespoon orange liqueur (I used 1 tsp. vanilla)
.
Bring orange juice and sugar to a boil, over high heat. Reduce heat and simmer until mixture thickens and reduces to ½ cup (3 or 4 minutes). Remove from heat and stir in the liqueur (vanilla). Keep brushing the tops and sides of the warm pound cake until all of the glaze is used up.
.
NOTE: This pound cake has such a fresh clean taste and because it is just a little different, it would make a great gift for someone.

Before Christmas, I purchased the holiday issue of a magazine called Sweet Cakes, published by The Best of Fine Cooking. I've made several desserts from the magazine and all have been well received by Hubby and friends.

Recently, Monica from Lick the Bowl Good told me she had the same magazine so we decided to try the magazines recipe for Coffee-Chocolate Cake together. I think she will be posting about it today, as well, so I hope you will visit her web site to see what she did with this great little recipe.

10 tablespoons unsalted butter (soft)
1+2/3 cups granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
½ teaspoon table salt
1½ cups + 2 tablespoons all purpose flour
½ cup + 1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1½ cups quality coffee (brewed and cooled)
.
Preheat oven to 350F and generously butter a 9" square baking pan. Line the bottom of the pan with parchment paper and butter the paper, then flour the bottom and sides of the pan (tap out excess flour). See note below.
With an electric mixer, cream butter, sugar & vanilla until smooth (about 1 minute). Blend in eggs, one at a time, mixing just until incorporated (about 20 seconds). With a whisk, mix in the rest of the ingredients by hand, until batter is smooth and mostly free of lumps.
Pour into prepared pan. Tap pan on counter a couple of times to remove any potential air bubbles. Bake on center rack of a 350F oven for 40 to 43 minutes.
Remove from oven and set pan on a cooling rack for 20 minutes. Carefully run a knife around the edges of the pan, invert onto cake rack and remove pan. Serve immediately or store in an air tight container (at room temperature) for up to 5 days...but it won't last that long.

NOTE: Recipe says do not used Dutch-processed cocoa powder

NOTE: Although the directions say to bake in a 9" square pan and take extra precautions with parchment paper, extra greasing and flouring, I did not do ANY of that. I baked mine in a little half-bundt pan I have and I just sprayed it with a cooking spray that has flour in it (no parchment paper). It came out of the pan extremely easy.
.
NOTE: Hubby hates the taste of coffee, so I made this cake using Earl Grey tea and it tasted great.
.
NOTE: Wrap this cake with plastic wrap (directly on the surface of the cake) while it is still very hot. Let it cool completely like that and you will have a wonderfully moist cake that will last for several days. I do this with ALL of my cakes and it never fails.
.
NOTE: This is such a great little one bowl chocolate cake, with excellent flavor and moistness. It would make great cupcakes and I'm sure you could double the recipe and bake it in a 9x13. ONE WARNING: If you eat this cake while it is still warm, you will not be able to restrain yourself...it is really tasty!!

NOTE: Our family members are safe at the Alaska Iron Dog finish line in Nome, Alaska, although hubbies twin brother and snowmachine had to be towed the last 170 miles (by his son) and hubbies youngest brother and snowmachine had to be towed the last 53 miles (by a buddy). Both of their engines blew up (they were brand new snowmachines). At least they are all safe and off of the trail. Thanks for your well wishes.

I hope you will consider making this caramel pear upside down cake for your Valentine sweetheart. Served warm with a big scoop of vanilla ice cream, it will knock his/her socks off. Fresh Bosc pears, are baked in a homemade caramel sauce while a ginger-cinnamon cake bakes on top. This recipe has a couple of extra steps (to make the caramel sauce) but it is not hard to do. It is the most moist cake I've ever made.


Preheat your oven to 350F and spray a 9" x 2" cake pan with vegetable spray. Line the bottom of the pan with parchment paper and then spray it again.

TOPPING
2 large firm-ripe Bosc pears (about 1 pound)
1 cup white sugar
¼ teaspoon lemon juice
¼ cup cold water
4 tablespoons warm butter (cut up)

Peel, core and slice the pears in ¼" slices. Arrange the slices in the bottom of the pan, set aside. Make the caramel in a heavy bottomed 2 quart sauce pan. Stir sugar, lemon juice and cold water together. Bring to a boil over medium high heat (occasionally brush the walls of the pan with a wet pastry brush to wash down any sugar crystals). Boil, stirring, until it starts to turn amber. Watch carefully, once it starts to turn color, because it will darken quickly. Remove from heat and stir in the butter (it will really foam and sputter, so be careful). When it is well mixed, pour over the pear slices, set aside.
CAKE
1½ cups all purpose flour
1¾ teaspoons baking powder
½ teaspoon ground ginger
½ teaspoon ground cinnamon
½ cup whole milk
2 teaspoons vanilla extract
½ cup butter (room temperature)
1 cup packed brown sugar
2 large eggs
.
In a small bowl, mix flour, baking powder, ginger and cinnamon together, set aside. In another small bowl, mix milk and vanilla extract, set aside.
.
With electric mixer, beat the room temperature butter for one minute, or until it is light and fluffy; add brown sugar and beat on high for 3 minutes. Reduce speed and add eggs, one at a time, beating well after each. Make sure you scrape down the sides of the bowl once in a while.
.
Now you need to mix in the milk mixture and the flour mixture, but make sure you alternate (dry...milk...dry...milk etc.). Scrape down the bowl and give it one final mix but don't mix too long. Pour the batter over the caramel-pears.

Bake at 350F for 35 to 45 minutes, or until a toothpick inserted in center of cake comes out clean. Remove from oven and let the cake cool in the pan for 15 minutes. Invert on a serving plate and peel off the parchment paper. Cool.

Once you try this very simple, chocolate fudge glaze, you will be sold on it. I use it for a wide variety of things because it just takes a minute to whip up, it is delicious and provides a thick shiny glaze. I pour it on brownies while they are still hot & in the pan. You can dip cupcakes or cookies into it or pour it over a cake. It is thick, sweet, super smooth and even stays shiny after it dries (very pretty). I hope you try it. If you find some new, unique use for this glaze, please let me know. Sorry about todays poor photo quality, these photos were taken in a hurry.
½ cup light corn syrup (like Karo)
5 tablespoons water
5 tablespoons butter

Bring these three ingredients to a full boil, and boil for 20 seconds. Remove from heat and add: 12 ounce bag of semi-sweet chocolate chips.

Stir until melted and smooth. Cool to room temperature before you use it.

NOTE: I have not tried it, but I do not see any reason that you could not use ANY flavor baking chips for this recipe...I believe white chocolate would be very pretty.
NOTE: This glaze does not dry to the touch until the next day, so I wouldn't use this on anything that you have to pack for shipping.

A chiffon cake is sort of like an angel food cake, except better (in my opinion). It is an egg white based (like an angel food cake) but it also has a lot of whipped egg yolks in the recipe, so it has just a little more "body" than an angel food cake and isn't quite as prone to "falling" when you bake it. It sort of reminds me of those little round yellow strawberry shortcake sponge cakes sold in cello-six-packs in the store (except this cake is a million percent tastier and more moist than those).


1 cup of egg whites (about 8 eggs room temperature)
½ teaspoon cream of tartar
½ teaspoon salt
1½ cups white sugar (divided)
5 egg yolks
1 cup all purpose flour
2 tablespoons water
½ teaspoon almond extract
½ teaspoon vanilla extract
½ teaspoon lemon extract

Heat oven to 325. Beat egg whites, cream of tartar and salt in a large (non plastic) mixing bowl on medium speed until foamy. Beat in 1 cup of the sugar (on high speed) 1 tablespoon at a time (continue beating until stiff and glossy). Be careful not to under-beat. Set aside.

Beat egg yolks in a small mixing bowl until very thick and lemon colored (about 5 minutes). Beat in reserved ½ cup of sugar gradually (after 5 minutes, this mixture will look like lemon colored whipped cream at soft peak stage).

Add the flour to the egg yolk mixture, alternately with water and extracts on low speed. Gently fold the egg yolk mixture into whipped egg white mixture with a non-plastic utensil.

Spread in UNgreased 10" x 4" tube pan. Cut gently back through the cake batter with a metal spatula to break any large air pockets.

Bake in a 325 oven (bottom rack of oven) for 60 to 65 minutes or until the top springs back when touched lightly (my oven took 65 minutes). Remove from oven and turn pan upside down like you would for an angel food cake. Cool completely.

Run a long serrated knife, in a short sawing motion, around the perimeter of the cake (I use a thin bread knife) to release it from the pan.
NOTE: Don't peek (open the oven door) while this cake is baking. It is not good to jar your oven or cool off your oven while baking a cake.

NOTE: It is extremely important not to use any plastic bowls or utensils when preparing this batter. Also do not use silicone baking pans or ANYTHING that might have a trace of oil or grease on it. Grease or oil is "death" to egg meringues.

NOTE: You can also bake this cake in an oblong pan or jelly roll pan as long as you use parchment paper on the bottom and do not grease the sides of the pan. Baking time depends on the shape of the pan, but you can tell the cake is done when a toothpick, inserted in the center of the cake, comes out clean.

I hope you try this super-dooper easy peach dessert. It is sweet, fruity, full of fall flavor and mixes together in just minutes, so it would be great for last minute company!! This dessert is "over the top" delicious when served warm, with a scoop of vanilla ice cream!!

4 tablespoons butter melted
¾ cup all purpose flour
¾ cup white sugar
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon almond extract
¼ teaspoon salt
¾ cup milk
3 cups sliced ripe peaches (3 to 4 peaches)

Preheat oven to 350 and spray a square or round 9" baking dish with vegetable spray (I used a 9" springform pan). In a medium size bowl, mix first 8 ingredients until smooth. Spread into prepared pan and set fruit slices on top (I cut my peaches a little thick). Sprinkle with 2 tablespoons cinnamon sugar. Bake 50 to 60 minutes or until browned and bubbly (I baked mine for the full 60 minutes).

Excellent served with whipped cream or ice cream.

A few days ago, Donna, over at My Tasty Treasures, posted a yummy looking recipe for Pineapple Pecan Cake. Today, I decided to cut her recipe in half and make cupcakes instead (half of the recipe makes 15 cupcakes).

With my "tweaks" I was aiming for sort of a pineapple upside down cake flavor, and it worked!! I love recipes like this, they go together with just a bowl and a spoon... and couldn't be easier.

ULTRA MOIST

Here is Donna's original recipe, and my tweaks are in blue:
2 cups all purpose flour (1 cup)
2 cups sugar (1/2 cup white + 1/2 cup brown sugar)
2 teaspoons baking soda (1 teaspoon)
2 eggs (1 egg)
1 teaspoon vanilla extract
1 teaspoon butter extract
20 ounce can crushed pineapple (8 oz. can)
1 cup chopped pecans - toasted (2/3 cup)

Stir everything in a large bowl, just until moist. Bake in a greased 9x13 pan (I used paper-lined cupcakes) and bake at 350 for 30-35 minutes (I baked my cupcakes for 18 minutes).

NOTE: Do not drain the crushed pineapple.

FROSTING
8 ounces of cream cheese (softened)
1 stick of butter (softened)
2 cups powdered sugar
1 tablespoon (yes tablespoon) of vanilla
Mix until smooth

NOTE: These cupcakes are exceptionally moist even though they have no oil or butter in the batter. They actually taste a lot better at room temperature than they do when they are hot.

My daughter recommended this cake recipe and she was right, it is delicious (she found the recipe on allrecipes.com). Not only is it super moist (made with a cup of butter + a cup of sour cream + a cup of blueberries) but it has a brown sugar and pecan layer that swirls through the batter as well!! 1 CUP BUTTER AT ROOM TEMPERATURE
2 CUPS WHITE SUGAR
1 CUP SOUR CREAM
2 EGGS
1 TEASPOON VANILLA EXTRACT
1 TEASPOON LEMON ZEST (my recipe tweak)
1 & 5/8 CUPS ALL PURPOSE FLOUR (see note )
1 TEASPOON BAKING POWDER
1/4 TEASPOON SALT
1 CUP FRESH OR FROZEN BLUEBERRIES
1/2 CUP BROWN SUGAR
1 TEASPOON CINNAMON
1/2 CUP CHOPPED PECANS

Preheat your oven to 350 and grease and flour a 9" bundt pan.

In a large bowl, cream together the butter and sugar until light and fluffy; beat in eggs one at a time; stir in sour cream, vanilla and lemon zest. Combine the flour, baking powder and salt and stir it into the butter mixture until well blended; fold in blueberries.

Spoon half of the batter into the prepared bundt pan. In a small bowl, combine the brown sugar, cinnamon and pecans. Sprinkle half of the brown sugar mixture over the batter in the pan & top with the second half of the batter. Sprinkle the rest of the brown sugar mixture over the top of everything. Gently swirl a butter knife through the batter a couple of times to irregularly distribute the brown sugar pecan layer.

Bake the cake for 55 to 60 minutes in preheated oven. Cool cake (in the pan) on a wire rack for about 10 minutes before turning out onto a cake plate.


A couple of people have written to ask me about the glaze on this cake. I start with two or three tablespoons of melted butter, two cups of powdered sugar and a teaspoon of vanilla. I then whisk in just enough whipping cream to make a good consistency. Sorry I can't be more specific than that (I don't measure glaze ingredients).

As for the question I received about the intensity of lemon...I used one teaspoon of finely grated lemon zest in this recipe and you can taste it, but it is very subtle. I think next time I will go for two teaspoons of zest.

NOTE: The recipe called for 1 + 5/8 cups all purpose flour. I'm assuming this must be a metric conversion? I measured 1 + 3/4 cups then removed a tablespoon of flour.

I made these strawberry cupcakes yesterday and they were a big hit. The recipe is a great "cheater recipe" that I've used for years. Basically it is a dry cake mix + a 20 ounce can of fruit filling + 3 eggs. That's it! It produces an extremely moist and flavorful cake! You can use ANY dry cake mix and ANY canned fruit pie filling so the combinations are endless. Our favorite is chocolate with cherry pie filling but we've also thoroughly enjoyed chocolate cake with raspberry pie filling, spice cake with peach pie filling, spice cake with apple pie filling and yellow cake mix with lemon pie filling.



For the cupcakes posted today, I combined a box of Betty Crocker strawberry cake mix (ignore any directions on the box) with a 20 ounce can of Wilderness strawberry pie filling and three eggs. Beat on medium-high speed for about 2 minutes (batter will be a little thicker than you expect). Fill paper lined cupcake pans about 2/3 full and bake at 350 for 20 minutes. Oh so yummy!

NOTE: Don't worry about the "chunks" of fruit in the pie filling. When you mix it into the cake mix with your electric mixer, the fruit will break up (which is what you want).

NOTE: This recipe is not suited for white cake mixes for some reason. They taste good, but have a strange color after they are baked.

NOTE: The weight on most cans of pre-prepared pie filling is different...some cans are 18 ounces some are 20 ounces. This measurement doesn't seem to be crucial. Just get the size can closest to 20 ounces that you can find.

NOTE: This recipe works very well for sheet cakes as well as layer cakes. Just use the toothpick test for doneness instead of the baking times on the cake mix box. After you remove the cake from the pan, cover it tightly with plastic wrap and let it cool. Keep covered until you frost the cake.
 
Buttercream Frosting

1 cup of UNSALTED butter (room temperature)

1 teaspoon vanilla extract
1 teaspoon almond extract
4 cups powdered sugar
1/4 cup milk
food coloring (optional)

Cream the butter with an electric mixer until it gets fluffy. Add everything else and beat on medium speed until everything is well mixed, then beat on high speed until it is smooth and fluffy.

NOTE: These cupcakes are topped with Wilton's sparkle sprinkles (clear).

I love recipes that are perfect the first time you try them; this peanut butter cake is one of those recipes. It is delicious warm or cold, it is more moist on day two AND it has an intense peanut butter taste and a peanut butter-honey frosting topped with mini-chocolate chips. It is sure to please kids and adults alike.

Our next door neighbor came over, today, on his new riding mower. I sent him home with several pieces of this cake wrapped in foil. He later told my husband that he drove the mower home in slow speed so he could eat two pieces of the cake as he put-putted his way back to their house. I think that is a pretty serious thumbs-up for this recipe, lol.


 2 and 1/4 CUPS ALL PURPOSE FLOUR
2 CUPS LIGHT BROWN SUGAR (packed)
1 CUP PEANUT BUTTER
1/2 CUP BUTTER (room temperature)
1 TEASPOON BAKING POWDER
1/2 TEASPOON BAKING SODA
1 and 1/4 CUPS MILK
2 TEASPOONS VANILLA EXTRACT
3 EGGS

Preheat your oven to 350 and grease and flour a 10 x 15 cake pan. In a large bowl, mix the first 4 ingredients with an electric mixer; blend at low speed until crumbly. Add the next 5 ingredients and blend at low speed until everything is wet, then beat at medium speed for 3 minutes.

Pour into prepared pan and bake, in the middle of your oven, for 35-40 minutes or until the toothpick test comes out clean.
Let the cake cool (in the pan) for 10 minutes, then spread the frosting on the hot cake (recipe follows) and sprinkle one cup of mini-chocolate chips over the frosting.
 
PEANUT BUTTER-HONEY FROSTING

1/2 CUP PEANUT BUTTER + 2 TABLESPOONS HONEY + 1 TEASPOON VANILLA EXTRACT + 2 CUPS POWDERED SUGAR + 4 to 5 TABLESPOONS MILK
Warm the peanut butter and honey in the microwave just until it gets soft and easy to stir, then add everything else and beat until smooth. Spread over hot cake and sprinkle with one cup of mini-chocolate chips.

NOTE: As you can see from my photo, I double the frosting (but I stick to the one cup of mini-chocolate chips).

I don't give out 5 stars for a recipe very often and certainly NOT the first time I try a recipe. However, this recipe received my 5 star rating immediately! It is, by far, the best pound cake recipe I've ever tried. It's texture is smooth, moist and velvety, with a hint of lemon. The recipe makes one 10" tube pan or two loaf cakes. I hope you try it.



(1) 8 ounce cream cheese (room temperature)
6 eggs (room temperature)
1½ cups butter (room temperature)
3 cups white sugar
3 cups CAKE flour
2 teaspoons vanilla
1 teaspoon lemon extract

Preheat oven to 325. Grease and flour a 10" tube pan or 2 large loaf pans.

In a stand mixer (using whisk attachment), cream the butter and cream cheese until smooth and silky. Slowly add the sugar while the mixer is running, and beat until very fluffy (it will look like whipped cream and may take as long as 5 minutes). Add the eggs, one at a time, beating well in between each egg. Add the extracts and the lemon zest and mix well.

Replace whisk attachment with paddle attachment. Sift the cake flour into a one cup measure and level off with a knife. Add flour to butter mixture, one cup at a time, mixing just long enough for the flour to disappear.

Pour batter into prepared tube pan (or two large prepared loaf pans). Hold the filled pan about 6" above your counter and drop it (this will dislodge any big air pockets). Bake cake for 1 hour 20 minutes. Test for doneness with toothpick test. Let the cake cool about 10 minutes then remove from pan.

NOTE: The butter, cream cheese and eggs must be at  room temperature (I leave mine on the counter overnight). If you don't have these ingredients at room temperature, they will not mix correctly and your cake will not bake properly...very important.

NOTE: Don't try this recipe with all purpose flour. Cake flour really makes a difference.

NOTE: You will know you have beaten the butter-cream cheese - sugar mixture enough when your stand mixer bowl is about 2/3 full and is the consistency of whipped cream.
