We are starting yet another new week for BM#55 with me trying out my hands at an interesting theme - Make in a Muffin. somehow I always loved the idea of cooking in a muffin, not just a muffin but almost everything else. The idea was so pressing that I had to include it in this edition and I desperately wanted to try my hands at various ideas I came across. Making something in muffin ensures you have single serving and portion control. I enjoyed making pizzas and other savory dishes in this as well.

While I was quite prepared for the Healthy Breakfasts being done in Spice your Life!, this theme looked bleak. I was so caught up with cooking for Sep Mega BM as none were ready, I almost thought I might be skipping it. I started making it almost after dinner was done last night. I was inspired by this idea, though I ended up making it randomly based on my previous cookie recipes. As always when baking a cookie, I think to myself that I should give sometime for the cookie to settle down and harden. I am always in a haste. However my boys were so excited and declared it heavenly!





They had it for their breakfast this morning and couldn't have a better start in their thinking! Make in a Muffin brings in so much creativity and I am hoping I will do justification to the theme and cook the next two dishes on time this evening!

Chocolate Chip Lava Cookies in Muffin Tray

Ingredients Needed:

All purpose flour / Maida - 1 cup
Baking Soda - 1/2 tsp
Unsalted Butter - 3 - 4 tsp
Salt a pinch
Granulated Sugar - 1/4 cup
Brown Sugar - 1/4 cup
Choco chips - 1/2 cup

for the stuffing
Choco chips - 1/2 cup

How to make Chocolate Chip Lava Cookies in Muffin Tray

Grease the muffin tray with butter, keep it

In a bowl, take the flour, add soda, sugars, choco chips and mix well. Then add the soft butter and mix to a dough. If needed add a tsp of milk.

Divide the dough into 12 equal balls. Flatten 6 balls and place in the muffin tray. Bake in a pre heated oven at 185 C for 10 mins.

Melt the choco chips till soft, keep it aside.

Remove, make dents in the center, pour the melted choco chip and place the other flatten cookie and press well to enclose completely.

Bake again for 15 mins, rest to cool down and store it in an airtight container.

I was so delayed for the second day post and it wasn't because of wanting from my side! Things do end up hectic during weekday when it becomes next to impossible to even plan to cook something different from the regular dishes, especially when I have to click pictures. so I have been trying to make something since Monday and I finally ended up making it this morning.

In between when I was telling Hubby dear on how I am not allowed to cook, he said I am welcome to make something right then. It was 10 at night and I showed face and said who will eat a breakfast at this time! He typically said you can't bake a cake and eat it right then too. I know its twisted but suited my state so well.

I ended up making this dish this morning and though original dish was supposed to be Bread Chat, I ended up making this differently. I almost used the same filling as the Capsicum Paneer stuffing. I made it again for Hubby dear's breakfast and I thought I could make these double layered Baskets.

I have already made a different stuffing of baked bread basket, however today's basket is layered and turns out more crispy and layered.

After I made those Bread Baskets with Fruits n Jam, we needed savory treat. I made two versions, one for the elders and another for kids with less spice. I liked these savory ones much better as it had a
semblance to the filling I remember making it many years ago. I don't remember the recipe now, which is very strange as it was something I used to prepare so often for myself.

Seeing how much Athamma and Amma enjoyed these savory baskets while we were taking pictures, I realized that we have got a perfect breakfast dish ready, which doesn't really take much time.









Baked Bread Baskets with Savory filling

Ingredients Needed

Whole Wheat Bread Slices - 8 nos
Butter

For the filling:

Onion - 1 medium
Potato - 1 medium
Green Chili - 1 long (reduce or replace with 1/2 tsp of chili powder for kids)
Salt to taste
Butter - 1/2 tsp
Roasted Cumin powder

Grated Cheese for topping

Method to prepare:

Pre -heat the oven at 185 degrees

Grease the muffin pan with butter.

Trim the bread slices and press them down into the muffin holes. Ensure they cover the sides so as to form cups.

Bake the bread at 185 degree for 5 mins Check if they have turned crisp. Bake for couple of more minutes if the baskets are not crisp.

Allow to cool for a minute.

To make the filling, heat a non stick pan with butter, sauté finely chopped onions along with green chilies till onions turn light brown.

Peel the potato and chop into small pieces. Microwave for 5 minutes to get them soft. Mash them well and add to the pan.

Mix the onions and potatoes well. Add the salt, cumin powder. Simmer for couple of minutes. Remove and allow it to cool.

Grate the cheese and keep it aside.

When the baskets are ready, scoop a spoonful of this filling into the baskets. Top with grated cheese. Bake again for 1 2 minutes at 185 degree C.

Sprinkle tomato ketchup on top before serving.


These were really very delicious and tempting to think that only kids will enjoy.

Sometimes the efforts taken to get yourself cook something is more than the actual cooking time. It's exactly what happened in my case while I was thinking about this recipe. While I had so many other ideas thought for this theme, many things seem to happen at the same time that it never materialized.

When I realized that I will not be able to make the other ideas that were supposed to be made, I finally thought the first day idea should be repeated with making a cup with those cookies. To motivate myself, I confessed to my group this morning that I will be baking some soon. I wanted to make these before the kids left for school, somehow I couldn't and finally baked it after they left. I tasted the cookies, it was so good, I know the chocolate ganache in the center is going to be sinful!

I took the big muffin tray and realized it will end up being very huge. Imagine the mini muffin tray yeild this size! If you plan it well and make it ahead, these will be a great party food. I can't wait for the kids to come back in the evening to enjoy these!





 

Eggless Chocolate Cookie cups with Ganache

Ingredients Needed:

All purpose flour - 1 cup
Sugar - 3/4 cup
Cocoa powder - 3 tsp
Baking Soda - 1 tsp
Choco Chip - 1/4 cup
Butter - 3 -4 tbsp

Butter to grease the mould

For the Ganache

Fresh Cream - 1/2 cup
Dark Chocolate - 1 cup
Sparkles for topping
Chocolate Shaving

How to make the Chocolate Cookie cups with Ganache

In a bowl, mix the flour along with cocoa powder, baking soda, sugar and choco chips. Then add in the butter and knead to a dough. If required add few drops of milk for binding.

Grease the under sides of a mini muffin tray, divide the cookie dough into small balls and cover over the muffin moulds.

Bake in preheated oven at 185 C for 5 mins, then at 170 for 15 mins. Let it rest for it to cool down.

Meanwhile MW the cream at 30 secs, then add chopped chocolate and MW again for 30 secs in 2 spurts. Total time taken for the ganache is 1 and 1/2 mins. Whisk well.

when the cookies are set, pour the ganache into the bowls and sprinkle the sparkles along with chocolate shaving.
